Hey y’all, welcome back to Chalkboard Chatter! I’m Candice Nicholson—some of you might remember me as Candice Jackson, but, you know, new name, same heart. I’m so glad you’re here, whether you’re tuning in from your classroom, your kitchen, or maybe you’re just out for a walk. This is your cozy corner for connection, inspiration, and a little bit of real talk about what it means to be an educator these days. Today, I’m opening up about the ten reasons I absolutely love being an educator—yep, I made a list, and I’m not even embarrassed about it. We’ll also chat a bit about travel dreams, self-care, and, of course, I’ve got a no-cook Dish of the Day for you. So, let’s settle in, take a breath, and just enjoy this time together. This space is all about restoration and community, and I’m grateful you’re here with me.
Chapter 2
10 Reasons Why I Love Being an Educator

Alright, let’s get into it—my top ten reasons for loving this wild, wonderful job. First up: watching lightbulbs go off. There’s just nothing like that moment when a student’s eyes light up because they finally get it. I mean, I still remember a third grader who struggled with multiplication for weeks, and then one day, it just clicked. That little smile? Pure magic.

Number two: building lifelong relationships. I’ve had students come back years later and say, “Ms. Jackson, you believed in me when I didn’t believe in myself.” That’s the stuff that sticks with you, you know? It’s not just about what we teach, but how we make them feel.

Third, creating safe spaces. Our classrooms are more than just rooms with desks—they’re sanctuaries. I love making sure every kid feels seen, valued, and safe to be themselves. Sometimes, that’s the most important lesson of all.

Number four: being a lifelong learner. I’m always picking up new strategies, learning about different cultures, or figuring out the latest tech tool. Honestly, the learning never stops, and I wouldn’t have it any other way.

Five: celebrating small wins. Whether it’s a student reading out loud for the first time or just raising their hand with confidence, those little victories? They add up. I live for those moments.

Six: championing equity. Every child deserves a fair shot at a great education. Being part of a profession that fights for fairness and inclusion fills me with purpose every single day.

Seven: inspiring future leaders. You never know who’s sitting in your classroom—a future engineer, artist, or maybe even a teacher. Knowing I get to play a small part in their journey? That’s priceless.

Eight: getting creative every single day. Whether I’m decorating a bulletin board or turning math into a scavenger hunt, teaching keeps my creativity alive. Sometimes I think I learn as much from the kids as they do from me.

Nine: being part of a passionate community. Educators are some of the hardest-working, most compassionate, and innovative people I know. I’m proud to be part of this tribe. And, as we talked about in previous episodes, that sense of community is what keeps us going, especially on the tough days.

And finally, number ten (drum roll): knowing I make a difference. Even on the hardest days, I remind myself—I’m part of something bigger. That’s what gives me the strength to keep showing up, heart full, chalk in hand.

Travel, Recharge & Walks in the Park

Now, let’s talk about recharging. If you’ve been listening for a while, you know I’m a big believer in intentional rest—something we’ve touched on in past episodes. I’m still dreaming about that Greece trip I’ve got planned for spring 2026. I mean, whitewashed buildings, ocean breezes, and all the feta cheese I can handle? Yes, please. But until then, I’ve set a much simpler goal: more walks in the park. Just me, my thoughts—or maybe a good audiobook—and the sound of birds or kids laughing nearby. It’s a reminder that you don’t always need a plane ticket to recharge. Sometimes, it’s just about taking a little time for yourself, even if it’s just a walk or a quiet cup of tea. Rest is productive, y’all. Those small breaks help us show up as our best selves, both in and out of the classroom.

Dish of the Day – No-Cook Summer Favorites

Okay, let’s get to one of my favorite parts—Dish of the Day! I know it’s been hot lately, and honestly, who wants to turn on the stove? So here are three of my go-to no-cook summer dishes. First up: zesty chickpea salad. Just grab some canned chickpeas, diced cucumber, tomato, red onion, a little olive oil, lemon juice, garlic, and parsley. Toss it all together and chill. It’s protein-packed and perfect for a picnic or a quick lunch.

Next, cucumber roll-ups. Thinly slice some cucumber, spread on hummus or herbed cream cheese, and roll it up with bell pepper strips or turkey. Crunchy, bite-sized, and fun for you or the kids—plus, zero heat involved.

And finally, fruit and yogurt parfaits. Layer Greek yogurt, granola, and fresh berries or mango. Add a drizzle of honey and a sprinkle of chia seeds if you’re feeling fancy. I like to prep these in mason jars for grab-and-go breakfasts. Simple, cool, and classroom-prep friendly. Win-win!
