Sunshine, Style & Summer Joy: A 6-Chapter Celebration of Teacher Life
Chapter 1
“What Are You Wearing?” Summer Fashion Talk
Candice Nicholson (Jackson)
Hey friends, welcome back to Chalkboard Chatter! I hope you’re somewhere cool and comfy, because, whew, this summer heat is not messing around. I mean, it’s like the sun just decided to crank things up everywhere—from Phoenix to Philly, it’s been wild. So, let’s talk about what we’re all wearing to survive these temps. For me, it’s all about lightweight, breathable fabrics—linen, cotton, and those moisture-wicking blends that don’t stick to you. I’m loving loose dresses and tops that let the breeze in, and honestly, I’ve retired anything navy or black for now. Light colors are my best friend. And, okay, can we talk about bathing suits for a second? I know a bunch of you are poolside or lakeside this summer. Have you found a new favorite? I’ve been into Summersalt and Andie Swim lately—cute, supportive, and they don’t break the bank. But I wanna know your go-tos! Drop your favorite summer brands or hacks in the comments, let’s help each other out.
Chapter 2
A Floral Wedding & Blush Ruffles
Candice Nicholson (Jackson)
Speaking of summer style, I just went to a family wedding this past Saturday, and it was absolutely beautiful. The dress code was floral colors, which I thought was such a sweet idea. I ended up in a blush pink dress with these soft ruffles—super flowy, super comfy—and because it was so hot, I pinned my hair up in a twisty updo. You know that feeling when you’re trying to look cute but also not melt? That was me. The ceremony itself was just... I mean, the vows got me all teary-eyed. There’s something about weddings that always reminds me to celebrate love in all its forms, even when it’s 90 degrees out. If you’ve been to any summer weddings or events lately, I’d love to hear what you wore or your favorite moments. Share your stories with me—I’m always looking for outfit inspo and a good love story.
Chapter 3
Be Honest… Are You Missing School Yet?
Candice Nicholson (Jackson)
Alright, let’s get real for a second. Teachers, be honest—are you missing school yet? I know, I know, it’s summer, we’re supposed to be recharging, but if you’re anything like me, there’s always that little voice in the back of your head thinking about lesson plans or classroom setups. I mean, I still check the school calendar at least once a week—old habits, right? But this is our time to refill our creative tanks and just breathe. For me, that means long walks in the park, catching up on my summer reading, and honestly, doing a whole lot of nothing without feeling guilty about it. We talked about this in a previous episode—how important it is to actually rest and not just pretend to. So if you’re missing school, that’s okay. And if you’re loving every minute of this break, that’s okay too. Balance, y’all.
Chapter 4
Dish of the Day – Summer Ribs, Chilled Sides & Cherry Love
Candice Nicholson (Jackson)
Now, you know I couldn’t let this episode go by without talking about food. Around here, food isn’t just nourishment—it’s tradition, connection, creativity, and comfort. Whether it’s a backyard barbecue, a picnic at the park, or a simple lunch on the porch with a glass of iced tea, the flavors of summer hold a special place in my heart. So today’s Dish of the Day is a true seasonal classic—smoked barbecue ribs, lovingly prepared by none other than my husband, Vern. Let me tell you, when I say he’s mastered the art of ribs, I mean it. He’s got this whole routine—soaking the wood chips, marinating the meat overnight, getting the smoker prepped just right with that low-and-slow magic. It’s like a backyard symphony, and let me say: the results speak for themselves🥔 Potato Salad Perfection, but ribs, as delicious as they are, don’t shine on their own. They need a good supporting cast. And in our kitchen, that means potato salad. Now, I’ve been making my version for years, and while I wouldn’t call it award-winning, I’ve had more than a few folks go back for seconds (and thirds). Here’s how I do it: Yukon Gold potatoes, boiled just until fork-tender—not too soft, we don’t want mashed potatoes here Finely chopped celery for crunchRed onion for that pop of color and flavorA little bit of chopped pickles or relish for brightnessDressing: a mix of mayo and Dijon mustard with a splash of pickle juice, a little garlic powder, and salt and pepper to tasteAnd the final flourish—paprika sprinkled on top, because if it’s not paprika-dusted, is it even potato salad? It’s cold, creamy, and refreshing—everything a summer side should be. And like any good comfort dish, it gets better after a few hours in the fridge.🍒 The Cherry on Top – Literally And now—dessert. This year’s real MVP? Michigan cherries.I’m talking about the fresh, ruby-red, slightly tart, perfectly juicy kind you get from the local farmers market. There’s a reason Traverse City calls itself the Cherry Capital of the World. And when they’re in season, they’re practically all we eat. Straight from the bag, over Greek yogurt, tossed in salads, or baked into crisps and hand pies (on the cooler days, of course!).We’ve even frozen them and added them to sparkling water with mint leaves—just a simple cherry spritz to cool you down. They’re such a perfect blend of sweet and sour, it’s hard not to eat a whole bowl in one sitting.🧊 No-Stove, No-Oven, No-Problem MealsNow let’s talk about something important in this summer heat—meals that don’t require turning on the stove or oven. Because let’s face it, nobody wants to be sweating over a hot burner when it’s already 95 degrees outside. So I’ve been leaning heavily into no-cook recipes that are just as satisfying and a lot more manageable. Here are some of my go-to favorites: 1. Cold Pasta SaladsToss some cooked pasta (made early in the morning or the night before) with cherry tomatoes, cucumbers, olives, and a light vinaigrette. Add in some feta or mozzarella pearls and fresh basil, and you’ve got a Mediterranean dream in a bowl. 2. Caprese Skewers Skewer cherry tomatoes, basil leaves, and fresh mozzarella balls. Drizzle with balsamic glaze. Not only are they pretty, they’re a hit at every gathering—and not a single burner involved. 3. Watermelon & Feta SaladChunks of watermelon, crumbled feta, mint leaves, a touch of lime juice, and a drizzle of olive oil. Sweet, salty, tangy, and cooling. Honestly, I could eat this every day in July. 4. Cucumber-Yogurt Bowls Layer sliced cucumbers over thick Greek yogurt, top with za’atar seasoning, olive oil, and a few sliced radishes or chickpeas. It’s simple, but so flavorful and filling. 5. DIY Snack Platters Sometimes dinner is just a big board of cold things: hard-boiled eggs, sliced cheese, hummus, crackers, cold chicken or turkey slices, fruit, and pickles. Add a little sparkling water and put your feet up on the porch? That’s summer living right there, 6. Fruit-Infused WatersHydration is half the battle. We’ve been infusing pitchers of water with combinations like: Strawberry + basilCucumber + lemonPineapple + mintBlueberry + orange slicesThey’re pretty to look at, fun to serve, and a refreshing switch from plain water.🎤 Audience Check-In: What’s on Your Summer Table? Now I’d love to hear from you, my Chalkboard Chatter family. What are your favorite no-cook summer meals?Do you have a legendary potato salad recipe passed down from a grandmother or uncle? What’s your secret to making ribs fall off the bone (or your favorite vegan alternative)? And who’s got a killer cherry dessert recipe?Send them in! You can DM me on Instagram, drop a comment on the podcast page, or email the show. I’d love to feature some listener dishes in a future episode—maybe even do a special Chalkboard Chatter Cookbook episode (ooh, now that’s an idea!).🏡 Food is Connection. At the end of the day, food in the summer is about more than taste. It’s about community—sharing meals outside under the stars, gathering around folding tables at reunions and weddings, packing a cooler for a spontaneous trip to the lake. Some of my favorite teacher memories aren’t from the classroom—they’re from potlucks, team barbecues, end-of-year cookouts with parents and students where we all pitch in and pass the paper plates. It reminds me that education and nourishment go hand in hand. We feed our students knowledge, we feed our families love, and we feed ourselves moments of joy—one bite at a time.So whether you’re team ribs, cherries, or no-stove snacks, I hope today’s Dish of the Day made you smile, made you hungry, and maybe even gave you a few new ideas to try. Because you deserve meals that are delicious and doable—even when the temperature says no.
Chapter 5
The Cherry Festival in Traverse City
Candice Nicholson (Jackson)
Speaking of cherries, Vern and I are getting ready to head up to Traverse City for the National Cherry Festival. If you’ve never been, it’s like cherry heaven—rolling orchards, lakeside breezes, pie-eating contests, concerts, and cherry everything. I’m talking ice cream, jams, sodas, even cherry wine. We’re planning to spend a few days just soaking it all in, and I’ll definitely be sharing highlights in a future episode. If you’ve got any Traverse City tips, favorite festival events, or cherry recipes, please send them my way! I love getting your recommendations, and honestly, you all have the best travel and food ideas.
